WHEAT MILLING

Milling is a layered and iterative process whereby the wheat grain is reduced to flour, and each grain is separated into its constituents – bran, germ and endosperm. The miller analyzes the wheat, then blends it to meet the requirements of the end use. The protein content of wheat determines the different types of flour. Wheat flour of different grades is produced through specific blends of wheat.

Chakki Milling is also known as Stone Milling. The stone mill is one of the original mills used for grinding wheat which uses a combination of compression, shear, and abrasion. In chakki milling, the final product is 96 % Atta and 4 % Bran, unlike modern milling. Therefore the product is more nutritious and tasty.
